8 in. frozen pie crust or
8 tbsp. butter softened, plus extra
2 cups flour, plus extra
1/2 tsp. salt
1 egg, beaten

Filling:
4 eggs
3/4 cup sugar
zest of 2 lemons
juice of 1 lemon
4 tbsp. butter, melted
confectioners sugar

To prepare crust:
In mixing bowl, combine butter with flour and salt. Using your hands or pastry cutter, incorporate the butter into the flour. Add the egg, and knead it in. Wrap the dough in plastic, and refrigerate for 10 minutes. Meanwhile, prepare the filling.

Preheat oven to 350 degrees F.

Filling:
Using a mixer, combine eggs, sugar and lemon zest. Beat on high for 3 minutes, until light and frothy. Add the lemon juice and the melted butter, reduce the speed, and continue to mix for 1 minute. Butter an 8 in. tart pan. Dust it with flour, shaking out the excess. Place the dough in the center of the tart pan, and spread it out with your fingers, lining the bottom and sides of the pan in a thin, even layer. Pour the lemon filling into the crust and bake for 25 to 35 minutes, or until it cooks through and starts to brown on top. Remove from the oven, and let cool. Dust with confectioners sugar, and serve.
