1 1/2 lb. cod or other white fish
1 large egg, lightly beaten
2 Tbsp. mayo
1 Tbsp. prepared mustard
1 Tbsp. butter, melted
1 tsp. chopped fresh parsley
3/4 tsp. salt
1/2 tsp. dry mustard
1/2 tsp. freshly ground pepper
1/4 tsp. garlic salt
1/8 tsp. ground red pepper
3/4 c. crushed cornflakes cereal
Vegetable oil
Red leaf lettuce leaves, tomato slices, red onion slices
6 Sandwich buns, split

Jalapeno Tartar Sauce:
1 c. mayo
2 Tbsp. pickle relish
1 Tbsp. chopped fresh chives
1 Tbsp. capers, drained
1 tsp. dried dillweed
1 jalapeno pepper, minced

Directions:
Directions:
Place fish in lightly greased 9X13 baking dish; cover with foil. Bake at 400 for 20 minutes or until fish flakes with a fork. Drain, cool and flake. Combine egg through red pepper in a large bowl. Stir in flaked fish. Shape into 6 patties, coat with crushed cereal. Place on paper towels, refrigerate one hour.
Pour oil to a depth of 1/2" in a large heavy skillet. Fry patties in hot oil over medium heat about 2 minutes on each side or until golden. Drain on paper towels. Serve on buns with lettuce, tomato, onion and tartar sauce.

Combine all tartar sauce ingredients; cover and chill.
