1.5 lbs of boneless chicken breast
1/4 canola oil
1 cup Italian flavor bread crumbs
1/2 cup Parmesan cheese
1 egg, beaten with salt and 1 tablespoon egg white (or use 2 eggs)
1 can Campbell's Golden Mushroom Soup
1/2 soup can of water
1 tablespoon Gravy Master
1/4 cup red wine
1 pkg sliced mushrooms

Heat oil in frying pan on medium heat. Preheat oven to 325 degrees.

Cut chicken into bite size serving pieces. Mix bread crumbs and Parmesan cheese in a shallow dish. Dip each piece of chicken into egg mixture and roll into bread crumb mix until thoroughly coated.

Fry slowly until golden brown, turning occasionally. Place fried chicken in a 13x9 baking dish. When all chicken is in baking dish, put the can of soup and the water in the frying pan along with the sliced mushrooms.

Bring slowly to a boil, stirring and scraping up the brown bits on bottom of pan. Add the wine and Gravy Master and bring to second boil. Pour soup mixture over chicken and cover with aluminum foil. Bake for 1.5 hours.
