3/4 Lb. Ground Beef
1/4 Lb. Ground Pork
2 Eggs, beaten
1/3 cup finely grated Parmesan, plus more to Garnish
1/4 cup Italian Breadcrumbs
Tbsp. Garlic, minced
**Tbsp. Italian Essence ( recipe to follow)
tsp. Salt
2 pinches Crushed Red Pepper
2 Tbsp. Olive Oil
1/2 cup Onion, chopped
1/4 cup Celery, chopped
2 Tbsp. Tomato Paste
14 1/2 oz. Whole Tomatoes, crush with your hand
3 1/2 cups Beef Stock or 2 14 oz. cans Beef Stock
3 cups Water
1/2 cup Ditalini Pasta or other small Pasta
2 Tbsp. Basil, chopped

Mix Ground Beef, Ground Pork, Eggs, 1/3 cup Parmesan Cheese, Breadcrumbs, 2 ts. Garlic, 3/4 ts. Italian Essence, 1/2 ts. Salt, pinch Red Pepper. Mix till combined.
Roll into Tbsp. size balls.
Heat stock pan, add Olive Oil and cook half at a time on Meatballs, brown about 4 minutes. Set aside
Add Onion, Celery and cook till soft (3-4 minutes) Add Tomato Paste, cook 1 minute, Add Garlic, cook 1 minute. Add Tomatoes & juice, Beef Broth, 3 cups Water, , 1/4 ts. Italian Essence, 1/2 ts. Salt, pinch Red Pepper. Stir. Return Meatballs to Soup and bring to Boil. Reduce heat to simmer and cook 30 minutes.
Add Ditalini or small pasta, stir well and cook 15 minutes or till Pasta is done. Stir in Basil. Serve and Garnish with Cheese.

2 Tbsp. Salt
2 Tbsp. Garlic Powder
Tbsp. Pepper
Tbsp. Onion Powder
Tbsp. Cayenne Powder
Tbsp. Oregano
Tbsp. Thyme
