Ingredients: Slices of cooked turkey (or hen). Consider 2 slices per person. 2 cups plain flour (or GF flour coating mix) 2 tsp. baking powder 1/2 tsp. salt 1/4 tsp. black pepper 2 eggs beaten 1 1/2 cups milk

Directions: |
Directions:Separate eggs. Combine milk, egg yolks, flour, baking powder, salt and pepper. Beat egg whites until stiff. Fold egg whites into batter. Dip slices of cooked hen or turkey into batter and fry until golden brown in deep fat at 375º - 400º. |

Notes: Jim and I had been married and living in Daddy's house in Fuss Hollow/Dyer Hollow for a few months when we decided to go to Auburn University for Jim to get his Master's in Agriculture. His professors at MTSU were extremely supportive and actually handled everything for us. Even to the point of getting me a job at the Auburn Union as a Catering Assistant.
I absolutely loved my job but neither of us were in love with Auburn! As the Catering Assistant, I assisted in planning the dinners and set up of the entertainment for visiting dignitaries to Auburn. While we were there, I assisted in the entertainment for such dignitaries as Dr. Joyce Brothers, Teddy Kennedy, Elvis Presley and many others. I only had the opportunity to meet Dr. Joyce Brothers but in a rather embarrassing way. Dr. Brothers wore a full length mink coat but she had no place to hang it!! I had not included a coat rack in the dining room! She had to lay her coat on the floor. I remember going in the room to ask her if she would like for me to get her a coat rack but she was very gracious and said no. There spread out on the floor was her long mink coat!! Embarrassing!!! However, the dinner was a hit and everything went very well.
We were only at Auburn a few months. Jim did not like it! He was far more interested in construction and building. I would watch him draw bookcases or make house plans while he was suppose to be studying. I knew that Auburn was not for him. On the day that I was walking through Auburn Union to meet him and tell him my big news that I had gotten a promotion to be the Auburn Union Caterer for Auburn University. Jim met me telling me we were going home! Since I knew Jim would not be happy at Auburn, we returned home.
Auburn Union had a few specific menus that they always prepared and served. The main meat course was either Maryland Turkey or a type of beef, such as roast.
