3 c. cooked sweet potatoes
1/4 c. butter
3/4 c. brown sugar
2 T. milk
1/4 tsp. salt
1/2 tsp. grated lemon rind (optional)
8 marshmallows
1/2 c. crushed corn flakes
Directions:
Directions:
Mash sweet potatoes. Add the next 5 ingredients. Scoop up about 1/4 cup of mixture. Center with marshmallow. Cover with more sweet potato. Roll in crushed corn flakes. Place in buttered baking dish. Bake about 20 minutes at 375º.

May be rolled in coconut rather than corn flakes.
