1/4 cup shredded cheddar cheese
1/4 cup blue cheese
1/3 cup celery stalks minced
1/4 cup carrot minced
salt and pepper to taste
5 thin chicken breasts
15 reduced fat Ritz crackers crushed
1 tbsp. light mayo
6 tbsp. Franks red hot sauce
1 tbsp. lemon juice
1/2 tsp. garlic powder

Preheat oven to 400º and spray baking dish

Mix cheddar, blue cheese, celery, carrot, salt and pepper.

place the mixture in the middle of the chicken cutlets and roll up the chicken.

in another bowl combine the mayo, 1 tbsp. red hot, and lemon juice.Dredge the chicken in the mayo mixture and roll in the crumbs.

Lightly spray the chicken and bake for 30 minutes.

While chicken cooks melt butter and mix with remaining hot sauce and garlic powder. Drizzle buffalo sauce over chicken breasts.

I will use panko breadcrumbs or whatever type I have on hand instead of Ritz and I always double this!
