A. Peanut Butter - Buy your own or make in food processor

B. Carrot-Ginger Jam:

2 pounds fresh carrots, peeled
4 cups white sugar
2 tablespoons fine minced fresh ginger
3 lemons, fresh
2 oranges, fresh

C. Millionaire Bacon:

1 lb. Thick-cut Bacon (if I'm going to eat bacon it HAS to be Apple-wood smoked)
1 tablespoon lower-sodium soy sauce
1/4 teaspoon Chinese five-spice powder
1 tablespoon Cayenne Pepper
1 cup packed brown sugar (light or dark)
1/4 teaspoon crust red pepper flakes

D: Pickled Fresno Chili:

1 cup unseasoned rice vinegar
1 1/2 teaspoons coriander seeds
1 1/2 teaspoons sugar
1 1/2 teaspoons kosher salt
1/2 teaspoon peppercorns
7 ounces red Fresno chili, thinly sliced

E: Chopped Jalapenos (for garnish)

It is highly recommended you make the Carrot-Ginger Jam and the Pickled Fresno Chili's the day before you plan on making these monsters. . . you have been warned!

1. Grab you're favorite all natural peanut butter. (Roasted is best)

2. Carrot-Ginger Jam Directions:
Fine grate carrots; place in heavy saucepan with just enough water to cover; Simmer over low heat for 15 to 20 minutes, or until tender. Drain excess water.

Return carrots to saucepan. Add sugar and minced ginger. [Note: To prepare minced ginger; break off section of fresh ginger root and scrape skin off with the edge of spoon, slice peeled ginger into paper-thin coins, and then fine mince.] Zest lemons and orange; add to carrot mixture. Juice lemons and orange; add to carrot mixture. Slowly stir until completely blended. Simmer over low heat, stirring frequently, for 45 minutes or until thick and glossy. Spoon into sterilized jars and cool. Cover tightly and refrigerate for up to 30 days.

3. Millionaire Bacon Directions:
A. preheat the oven to 400 degrees F
B. line baking sheet with heavy duty aluminum foil and place bacon on top.
C. Mix 1/4 teaspoon of the Chinese five-spice with the soy sauce. and brush onto bacon
D. Place bacon with soy+spice mix into oven for 15 Minutes.
E. Mix 1 cup packed brown sugar, 1 tablespoon cayenne pepper, and 1/4 teaspoon crushed red pepper flakes.
F. Remove bacon from oven and Sprinkle the entire mixture over all the bacons. :) :P
G. Continue to bake for another 15-20 minutes or until the bacon looks crisp. Don't over cook of the brown sugar will burn.
H. Remove bacon onto a plate as the caramelized sugars may stick to paper or baking sheet. --> Immediately serve on tacos once bacon is complete.

4: Pickled Fresno Chili Directions:
A. Bring vinegar, coriander seeds, sugar, salt, and peppercorns to a boil in a medium saucepan. Stir to dissolve sugar, remove from heat, and add chilis.
B. Pour into a pint canning jar, cover, and let cool. Chill at least 12 hours and up to 5 days.

To make the tacos:
Heat Small or medium (Flour / Corn) Tortilla in pan. Place tortilla on plate and add millionaires bacon. Apply a healthy dollop of peanut butter and another healthy dollop of Carrot-Ginger Jam. Smear all over evenly. Add 4 - 5 Fresno Chili.
Garnish with Jalapenos if you dare!
