2 large sweet potatoes or yams, cut into matchsticks (no need to peel)
2 T. Olive oil
2 tsp. Salt
1 tsp. Ground cumin
1 tsp. Chili powder
1 tsp. Paprika
1 tsp. Black pepper
1/4 tsp. Cayenne (for hot make it 1/2 tsp.)

Directions:

Heat oven to 425 degrees
Toss the sweet potatoes in the olive oil in a large bowl.
Combine spices in a small bowl and add to the large bowl.
Arrange the potatoes in a single layer on a baking sheet.
Bake on the lowest rack for 12-15 minutes.
Turn the potatoes with a spatula and bake for 10 more minutes.
