1 T- 1/4 cup olive oil
1 lg onion
1 green pepper, chopped
2 cloves garlic, chopped
1 (141/2 oz) can peeled/chopped tomatoes, drained
1 (4oz) can diced green chillies
1 T thyme
4 (16oz) cans black beans, drained and rinsed
2 c (or more) chicken broth
Sour cream
Green onions
Dill pickles
Rice

Directions:
Directions:
Saute onion,green pepper and garlic in olive oil for 10 minutes. Mix in tomatoes, green chillies and thyme. Simmer another 10 minutes. Add black beans and chicken broth; simmer until hot. Add salt and pepper, if desired. Serve over rice and have bowls of sour cream, chopped green onions and chopped dill pickle for topping.
