3/4 cup firmed packed diced dried apricots (cover them with hot water for about
an hour, then drain well.
1egg, beaten with
1 cup sugar. and
2 TBSP melted butter

2 cups sifted flour
3 tsp baking powder
1/4 tsp baking soda
3/4 cup orange juice
1/4 cup water

1 cup chopped walnuts
(Optional-- grate some orange peel to add more flavor.)

Directions:

take out 1/2 cup of the flour and mix with the drained dried apricots.
Set the rest of the flour with the baking soda and powder

Add the dry ingredients alternately with the orange juice and water
Fold in the nuts and apricots ..
Mix well.
Pour into a buttered and floured loaf pan and let it sit about 20 minutes before baking at 350º
for about 40 minutes. Test with toothpick to make sure it is done in the middle.

Let coo 15 minutes, then upend on a rack to finish cooling

This is delicious sliced with cream cheese spread on for a snack, or lightly toasted. It also makes pretty tea sandwiches with cream cheese as a filling.
The loaf will not last long, but keeps 2-3 days tightly wrapped.
