Pork shoulder roast (remove any visible fat)
1 or 2 chile pasilla
Hominy
Chile quajillo
3-4 cloves garlic
Salt
Pepper
Oregano
Cumin
Onion

Toppings:
Cabbage, diced onion, radish, cilantro, limes.

Boil pork with pasilla chile and onion and salt.

While meat is boiling soak chile guajillos in hot water until soft. Put in a blender with garlic, salt, pepper, oregano and cumin. Process until thoroughly blended. Pour through a sieve into boiling pork. Add in hominy.

Continue boiling until hominy is cooked and meat shreds off the bone.

Serve in bowls allowing each to add their own toppings. Serve with tostadas and sour cream.
