1/2 to 1 c. chopped onion (if onion has a strong flavor only use 1/2 cup).
1 stick butter or margarine
10 ounces frozen, chopped broccoli cooked
1 (7 1/2 ounce) box Jiffy© corn bread mix
8 ounces cheddar cheese, shredded
4 eggs

Directions:
Directions:
Preheat oven to 350 º.
Spray a 9X13 inch baking dish with non-stick cooking spray.
In a medium skillet, saute onion in butter or margarine.
Place broccoli in a covered bowl with 1 Tbsp. of water and cook in microwave for 5 minutes; drain liquid.
In a large bowl, combine corn bread mix, onion, broccoli, cheese and eggs; mix well.
Pour into prepared pan and bake for 30 minutes.

The recipe does not call for milk or other liquid. The other ingredients contain enough moisture to produce a stiff mixture, and the cheese melts into it all and produces a great texture when it's done.
