2 tbsp butter
2 cups thinly sliced leeks, white and light green parts only
4 ounces thinly sliced shiitake mushrooms
3/4 tsp salt
3/4 tsp pepper
1 tsp brown sugar
1/2 tsp nutmeg
1 1-pound loaf ciabatta bread, cut into 1 inch cubes
1 bunch green onions finely chopped
4 eggs
6 cups whole milk
1 1/2 cups grated Gruyere or Swiss cheese

Directions:

1. Heat butter in a saute pan over medium heat. Add leeks, mushrooms, 1/2 tsp salt and pepper, brown sugar and nutmeg. Cook stirring until leeks are soft and golden brown about 30 minutes.

2. Place bread cubes on a baking sheet and bake 15 minutes or until dry and lightly browned.

3. Preheat over to 350 degrees. Grease a shallow 4 quart baking dish.

4. Combine leek mixtures, bread cubes and remaining ingredients in the baking dish. Sprinkle with 1/4 tsp salt and pepper.

5. Bake about 1 hour or until pudding is set and golden brown on top. Remove from over and let cool 10 minutes before serving.
