3 medium red bell peppers
1 lb ground beef
1 medium yellow onion, diced
1 can black beans- drained
1 cup frozen corn
1 jar medium chunky salsa
1 packet taco seasoning (about 2 Tbsp)

Directions:
Directions:
Blanch red bell peppers for 3 minutes in boiling water, drain, set aside.

Brown ground beef with onion, drain.
Add beans, salsa, corn, taco seasoning until heated through.

Fill bell peppers with meat mixture.

Bake in 350º oven for about 10-15 minutes.

Optional add cheddar cheese to top with sour cream and guacamole.
