1 pkt or TBSP active dry yeast.
3/4 cup warm water (110 º to 115 º)
4 1/2 tsp honey
1 Tbsp non fat dry milk powder
2 cups bread flour ( or use all purpose and add 1 tbsp gluten)
1/2 cup whole wheat flour
2 tsp Italian seasoning dried
1 tsp salt
2 Tbs pizza sauce or thickened tomato sauce.
3/4 cup chopped pepperoni
1/2 cup shredded Cheddar cheese divided
1/4 cup shredded Parmesan cheese
1/4 cup shredded mozzarella cheese divided
2 Tbs finely chopped onion
1 Tbs chopped mushroom
optional 1 Tbs chopped oloves

Directions:
Directions:
In a large mixing bowl dissolve yeast in the warm water. Stir in the honey and milk powder. Add the whole wheat flour and 1 cup bread flour and seasonings to the yeast mixture. Stir in enough of the remaining flour to make a soft dough and knead until smooth and elastic. Place in a greased bowl turning once to grease the top. Cover and let rise in a warm place for about 1 hour until double in bulk.
Punch down dough and turn onto a lightly floured surface. roll into a 14 in. x 12 in. rectangle. Sprinkle with pepperoni, 1/4 cup cheddar, Parmesan, 2 Tbsp Mozzarella, onion,and mushrooms to within 1/2 in, of edge. Roll up starting with a long side and pinch edges to seal. Cover and let rise about 45 min. on a greased baking sheet. Sprinkle with remaining cheese and bake 350 º for 25-30 minutes. Remove from the pan to a wire rack. Serve warm.
