2 cups chopped zucchini
1 cup chopped tomato
1/2 cup chopped onion
1/2 cup mozzarella cheese
1 1/2 cup milk(I think this ts too much I would use 3/4 cup)
8 eggs
1/2 teaspoon salt
1/4 teaspoon pepper

Directions:
Directions:
Heat oven to 400º. Grease 10 inch quiche dish or pie pan, Sprinkle with zucchini, tomato, onion, and cheese in dish. Beat remaining ingredients until smooth, 15 seconds in a blender or 1 minute with a hand beater. Pour into dish. Sprinkle top with more cheese and Italian spices. (I did not use Italian spices, however I used more than 1/2 cup of cheese. Bake until knife inserted in center comes out clean, about 30 minutes. Cool 5 minutes before serving.
