4 skinless catfish fillets
Salt and Pepper to taste
1 cup of milk or buttermilk
1/4 cup of flour
1/4 cup of cornmeal
2 teaspoons crab boil seasoning

Directions:
Directions:
1. Season the fillets on both side with salt and pepper.

2. In a baking dish add milk and put the fish in it. Make sure the fish is completely covered with milk. Cover the fish with plastic wrap and let the fish sit in the fridge for 15 minutes.

3. Meanwhile, preheat the oven to 475 . Grease a casserole dish with cooking spray. Place dish in the oven to preheat while you prep the fish.

4. In a shallow bowl , whisk together the flour, cornmeal, and crab seasoning.

5. Remove fish from the milk, letting any excess drop off.

6. Dredge on both sides with cornmeal mixture. Carefully remove the hot casserole dish from the oven and place the fish in the dish. Bake for 7 minutes, then flip the fish and continue to bake for 7 minutes until fish is golden.
