Crust:
1 cup + 1 Tbsp unsalted butter at room temperature.
2 cups flour
3/4 cup confectioners' sugar
pinch of salt.
Filling
4 large eggs
2 cups white sugar
1/3 cup freshly squeezed lemon or key lime juice
2 tsp finely grated lemon or lime zest
1 tsp baking powder
1/4 tsp salt
1/4 cup flour
3 Tbsp confectioners' sugar for decoration

Directions:

Preheat oven to 350º
Grease a 9x13 glass baking dish with 1 Tbsp butter (no flour)
Mix the crust ingredients in a bowl until thoroughly combined
Place dough in the baking dish and pat down the mixture into the bottom of the dish with your hands until evenly distributed.
Bake for 15 -18 minutes or until the crust is golden. Remove from oven and allow to cool.
Filling
Beat the eggs and sugar smooth with a mixer.
Add the juice, zest, baking powder, salt and flour. Mix until smooth. pour over cooled crust.
Bake for 25-30 minutes or until the filling is set.
Allow to cool to room temperature. Sprinkle with powdered sugar and cut into bars. Can be stored for a several days in air-tight container, Freezes well but separate the bars between wax paper for easy thawing.

This is a recipe from the back of a book by Mary Alice Monroe, who writes novels with a theme about the Low Country. It is a bit more trouble than my former lemon-bar recipe but really worth the extra labor.
In the South these bars are a favorite. for morning meetings, afternoon snacks or just to pull out of the freezer for a treat.
