1 c. warm water
2 tsp. sugar
2 pkg. instant yeast
4 eggs, beaten
2/3 c. vegetable oil
2/3 c. sugar
1 tsp. salt
1 c. mashed potatoes
6 c. flour

Filling:
6 Tbsp. butter
1 c. brown sugar
2 Tbsp. cinnamon

Caramel Icing:
1/2 c. butter
1 c. brown sugar
1/4 tsp. salt
1/4 c. milk, scant
1 tsp. vanilla extract
2 1/2 c. confectioner's sugar

Directions:
Directions:
Mix together sugar, water and yeast. Mix the next six ingredients and add to first mixture. Let rise until double.
Roll out dough. Spread with softened butter, brown sugar, and sprinkle with cinnamon. Roll up and cut. Place in pan, let rise and bake at 350 degrees until brown.

For Icing:
Melt butter in saucepan. Stir in brown sugar and salt. Cook on low for 2 minutes, stirring constantly. Add milk. Remove from stovetop and add vanilla.
Let cool and then add powdered sugar. Pour generously over hot cinnamon rolls.
