4 large softshells
1 1/2 lbs. ground beef
1 pkg. enchilada mix (powdered)
1 can original Rotel
1 can mild enchilada sauce, red or green
8 oz. shredded cheddar cheese

Directions:
Directions:
Brown hamburger. Add enchilada mix. Stir. Add Rotel. Stir. In 13x9 pan, spoon 1/4 hamburger into middle of each shell. Fold in thirds. Prepare all four shells. Pour the red or green enchilada sauce over shells. Top with cheese. Bake 350 for 30 minutes.
