Pie crust (double)
5 cups fresh blueberries
1 Tbsp. lemon juice
1 c. sugar
1/2 c. flour
1/8 tsp. salt
1/2 tsp. ground cinnamon
2 Tbsp. butter
1 large egg, well beaten
1 Tbsp. sugar

Directions:
Directions:
Preheat oven to 400. Sprinkle berries with lemon juice and set aside. Roll out 1/ of pie crust and fit into a 9" pie pan. Combine sugar, flour, salt and cinnamon; add to berries and stir well. Spoon into pie crust. Dot with butter. Cover with top crust. Cut steam vents into crust. Brush top of pastry with beaten egg, then sprinkle with sugar.
Cover edges with foil to prevent over-browning. Bake at 400 for 35 minutes, or until golden brown.
