3 cups cooked rice (I use brown)
1 cup chopped parsley
1/2 cup shredded sharp cheddar cheese
1/3 c. diced onion
1/4 c. diced green pepper
1 garlic clove, minced
14.5 oz. evaporated milk (1 can)
2 eggs, beaten
1/4 c. vegetable oil
1 T. salt
1 lemon, grated zest and juice

Directions:

Pulse parsley, green pepper, and onion in food processor. Combine all ingredients and pour into a greased casserole dish.
Bake at 350°F for 45 minutes or until it is like a custard.
