whole-wheat hamburger rolls, split

2 lbs of pork tenderloin
(Makes ~10 sandwiches)

1.5 tbsp extra virgin olive oil
2 tbsp salt
1 tbsp pepper
.75 cup brown sugar
1/8 cup paprika
1.5 sprigs thyme
3 cloves garlic
.5 onion, chopped
1 teaspoon chili powder
.5 tsp cumin
.25 tsp cinnamon
1/8 tsp cayenne pepper
1/4 tsp celery seed
.15 cup apple cider (or red wine) vinegar
1 tbsp worcestershire sauce
1 tbsp molasses
1/6 cup ketchup


== Non-mayo "Coleslaw" topping ==
(I eye-balled this and it came out okay!)

carrots
parsley
purple cabbage, finely sliced
white onions, chopped
whole-grain mustard, e.g., grey poupon
(Could use a small amount of aioli or olive oil)
lemon juice
red wine vinegar
black pepper

Add meat spices to slow cooker.
Shave fatty layer off pork and then put it in.
Cook at low for 5 hours.
Pull meat apart with two forks.
Cook at high for 2 hours.

Cut up vegetables for non-mayo coleslaw.
Mix ingredients.
