2 very ripe bananas, should be totally black, mashed
2 eggs
1 3/4 c. flour
1 1/2 c. sugar
1 c. chopped walnuts
½ c. vegetable oil
¼ plus 1 tbs. buttermilk (or 1/4 c. reg. milk plus 1 heaping tbs. sour cream)
1 tsp. baking soda
1 tsp vanilla
½ tsp salt

Grease and flour loaf pan. Combine all ingredients in large bowl and mix well. Transfer to prepared pan. Bake at Bake @ 325℉ until top is golden brown and splits slightly, about 1 hour 15-20 minutes. Can be baked in 3 smaller individual loaf pans in which case they will take about half the time. Check with a wooden skewer.

Cool on rack then remove carefully from pan.
