1 1/4 cup light corn syrup
2 egg whites
dash salt
1 tsp. vanilla
top cake with coconut

Directions:
Directions:
In 1-qt. saucepan over medium heat, heat corn syrup to boiling; remove from heat. In large bowl, at high speed, beat egg whites and dash salt just until soft peaks form. Slowly add hot syrup; continue beating 6-8 minutes until frosting is fluffy and forms stiff peaks when beater is raise. Beat in vanilla. Ice cake. Top with coconut.

The comment on the recipe that posted this frosting recipe was "good"...don't remember making it though. Added it as it sounded similar to the 7 minute frosting that Mother made but wondering if it might keep better,. Worth a try.
