1 medium onion chopped
2 to 3 tablespoons butter
2 large boiling potatoes, skinned and chopped
1 pound fish (flounder or cod)
1 12 ounce can evaporated milk
1 teaspoon salt
pepper


Directions:
Directions:
Melt butter in a medium to large saucepan, saute the onions slowly till they are soft and just starting to turn golden brown. Layer the potatoes on top of onion then the fish. Add water to cover potatoes. Cover the pan and simmer gently until potato is cooked through. Both fish and potatoes should be done. Use for to break up fish and stir in chowder. Add the can of evaporated milk, salt and pepper. Heat til steaming. Serve. I remember mother cutting up salt pork in little pieces and frying them and then sprinkle them on top when serving.
