2 lbs. medium size shrimp
3 lbs. onions
1 lb. linguine
olive oil
1 stick of butter
1 c. italian romano cheese
salt /pepper to taste

Directions:
Directions:
1. Clean shrimp and set aside in refrigerator
2. Saute onions in olive oil covered. Add pinch of salt/pepper
3. Onions should be soft and transparent-DO NOT BURN ONIONS
4. Cook linguine according to directions adding 1 T. salt to water
5. While linguine is cooking, cook shrimp in onion/oil mixture
6. Drain pasta, reserving 1 c. of pasta water
7. Add butter and 1 c. italian romano cheese to linguine
8. Combine shrimp/onion mixture and pasta mixture
9. If mixture seems dry, add some pasta water
10. If desired, guests can sprinkle more cheese on their pasta

I usually serve this dish on Christmas Eve, but it can be served anytime. It is a great dish to serve if you are having a buffet. Number of servings mentioned is for a meal just with the pasta. Delicious served with italian bread and a glass of wine
