1/3 cup olive oil
1/4 cup salad oil
3 1o ounce pkgs frozen peas
3 medium onions, chopped
1 & 1/3 cups coarsely chopped celery
1 5 0z can water chestnuts, drained and sliced
4 tsp cornstarch
1 cup beef broth
1 tsp soy sauce
salt to taste

Heat oils in large skillet over high heat. Add all vegetables and when peas start sputtering, cover and turn heat to low. Cook 10-15 minutes, stirring occasionally.
Do not allow vegetables to get overdone, they must remain crisp.

Dissolve cornstarch in 1/4 cup of the broth, then combine with remaining broth.
Pour over vegetables and cook, stirring c. Ad.ontantly until slightly thickened and transparent.
Add seasoning, cook 1 minute longer, serve at once or keep warm in low oven.
