• pancetta or salt pork – 4oz
• garlic cloves – 2 large peeled
• olive oil – 3-4 Tbls
• hot red pepper flakes (optional) – ½ tsp
• freshly grated pecorino romaine or parmesan –1/2 cup (+ extra for serving)
• 2 large eggs
• salt
• pepper
• Italian flat leaf parsely
• spaghetti – 1#

PREPARATION:
• Bring 6 quarts of water to a boil and add 2 heaping tablespoons salt.
• add olive oil pancetta, garlic and hot pepper flakes (if used) to sauté pan and cook over very low heat for 12-15 minutes - pancetta should brown very slowly and render out all of the fat
• When water boils, cook the pasta according to the package directions, until al dente (9-12 minutes)
• Meanwhile, beat eggs in bowl and stir in cheese
• Wend al dente, drain spaghetti and add to serving bowl
• quickly pour hot contents of sauté pan (pancetta, etc) to spaghetti and toss
• quickly add egg/cheese mixture to hot pasta and toss to coat spaghetti
• grind lots of black pepper over pasta, toss again and serve with more cheese and pepper – garnish with chopped parsley
