INGREDIENTS:
• 1# chicken livers
• oil, butter, schmaltz or duck fat – 3-4Tbls
• onion, chopped – 1 cup
• salt (1/2 tsp), white pepper (1/8-1/4 tsp) & pinch of cayenne (1/8- ¼ tsp)
• 2 hard boiled eggs
• mayonnaise – 2 Tbls
• cognac, brandy or bourbon – 2 Tbls

PREPARATION:
• clean & rinse livers & drain on paper towel
• sauté livers in ½ of oil, schmaltz (or duck fat) for 5-6 minutes over medium heat (don't overcook, livers should be a little pink inside)
• while livers are cooking, chop hard boiled eggs (not too finely chopped)
• remove livers from pan
• add remaining oil, schmaltz (or duck fat)
• add chopped onion and sauté over medium heat until translucent 5-6 minutes)
• put livers and onions in food processor – add mayonnaise, salt, white pepper, cayenne and bourbon (depending on size of food processor, this may have to be done in batches)
• pulse several times until well blended and smooth
• remove to serving/storage bowl and add chopped eggs – stir with wooden spoon or spatula to blend

SERVING:
• serve cold or at room temperature and schmear on crackers, bagels (preferably salt) or toast points
• schmear on corned beef or pastrami on Jewish rye sandwich
