2- 1 lb ork tenderloins trimmed
Marinade ingredients:
1 T grated lime zest plus 1/4 cup juice( 2 limes)
4 garlic cloves
4 tsp honey
2 tsp fish sauce
3/4 tsp salt
1/2 tsp pepper
4 tsp honey
Sauce Ingredients:
1/2 cup vegetable oil
4 tsp mayonnaise

Directions:
Directions:
Whisk together all marinade ingredients except oil and then add in oil and whisk until smooth.
Transfer 1/2 cup to small bowl and whisk in mayonnaise, set aside for sauce.
Use the rest to marinate the meat.
Cut each tenderloin in half vertically and then pound each of the 4 pieces to 2/4 inch thick and then score with a knife in a diamond pattern. Transfer to ziplock with marinade- press out all air and marinate a room temperature 45 minutesGrill- turn all burners on high and heat grill for 15 minutes. Leave primary burner on high and turn others off.
Cook on the hot side of the grill 3-4 minutes on each side until well browned.
Then transfer to the cooler side and cover and cook until meat is 140º 3-8 minutes longer. Let rest 5 minutes and drizzle with the sauce and sprinkle with sea salt flakes.
