Savory Lemon Chicken with Vegetables Recipe

Ingredients: 2 boneless skinless chicken breasts 2 cups broccoli flowerets 1 cup sliced carrots 1/4 to 1/2 large onion 2-1/2 Tbsp. flour, divided 2 tsp. minced garlic 2 tsp. olive oil 1-1/2 cups chicken broth, divided Zest of one lemon 1 Tbsp. lemon juice 2 Tbsp. fresh parsley

Directions:Slice chicken into thin strips. This is best to do while it is still slightly frozen. Let thaw completely.
Put 2 Tbsp. flour, 1/4 tsp. salt and pepper into a ziplock bag. Add chicken strips and shake to cover.
Heat oil in a large skillet over medium high heat. Cook the chicken until cooked through and golden brown. This just takes a few minutes.
Remove chicken from the skillet. Add 1 cup of the chicken broth and the garlic. Bring to a boil, scraping any brown bits from the skillet. Add broccoli, carrots and onion. Cover and cook one minute. Meanwhile, mix 1/2 Tbsp. flour in the remaining 1/2 cup chicken broth. Add to skillet and reduce to simmer. Cover and Simmer for about 1-1/2 to 2 minutes until broccoli is cooked, still slightly crisp. Add chicken and lemon zest. Heat through. Remove from heat and stir in lemon juice and parsley. |
