1 pkg Manicotti noodles
15 oz container ricotta cheese
2 cups shredded mozzarella cheese
1/4 cup grated parmesan cheese
1 egg, slightly beaten
1/2 tsp salt
1/4 tsp black pepper
1/8 tsp nutmeg
2 Tbsp chopped parsley (optional)
3 cups pasta sauce

Directions:

Pre-heat oven to 350º
Cook manicotti noodles in boiling water according to package directions
Mix ricotta, egg, 1 1/2 cups mozzarella and 1/4 cup parmesan cheese
Stir in chopped parsley if desired
Fill the manicotti tubes with cheese mixture and arrange in a single layer in 9 X13 glass baking dish
Cover with pasta sauce
Sprinkle remaining 1/2 cup mozzarella on top (you can wait to add during last 15 mins of cooking if desired)
Bake 25 mind or until bubbly
Let sit 5 minutes before serviing
