3 T olive oil or coconut oil
1/2 lg or 1 sm onion, chopped
1 head cauliflower
2 Roma tomatoes, chopped
3/4 C salsa or 1 Ttomato paste & 1/2 C chicken or veggie broth
2 cloves garlic, minced
1 jalapeño pepper, de-seeded & membranes removed, minced
1 tsp sea salt
1 tsp cumin
Child powder to taste
1/2 C cilantro, chopped
Juice from 1 lime or Tobasco Green sauce, as desired

Directions:
Directions:
Using a food processor, grate the cauliflower & set aside
Sauté chopped onions in oil. When soft, add tomatoes, jalapeño pepper, garlic, salsa, sea salt, cumin and child powder.
Add the cauliflower, cover & simmer until soft. You may need to add a little more broth if it gets too dry.
When everything has cooked, add lime juice & cilantro.
You can also add a little grated cheese on top.
