2 lbs beef soup bones
1 Cup chopped onions
3 carrots, chopped
1 bay leaf
2 cloves garlic, chopped
2 lbs beef short ribs
1 tsp thyme, dried
1/2 tsp paprika
8 Cups water
8 Cups or one head coarsely chopped cabbage
2 cans, 1 lb each, tomatoes
2 tsp salt (opt)
1/2 tsp tobacco sauce
1/4 Cup parsley, chopped
3 tbsp lemon juice
3 tbsp sugar
1 can, 1 lb., Sauerkraut

Directions:
Directions:
Place beef bones, onions, carrots, garlic, bay leaf in roasting pan. Top with short ribs, sprinkle with thyme and paprika. Roast uncovered in oven for 20-30 minutes at 350º or until meat is brown. Transfer meat and veggies to large kettle. Using small amount of water scrape browned meat bits from pan into kettle. Add water, cabbage, tomatoes, salt, tobasco. Bring to boil. Cover and simmer 1-1/2 hours. Skim off fat. Add parsley, lemon juice, sugar and sauerkraut. Cook uncovered for 1 hour. Remove bones and short ribs from kettle. Cool slightly, remove meat from bones, cut into cubes, return to kettle. Cook 5 minutes longer. Done.

Another Aunt Tip recipe. I remember watching the three sisters make this all afternoon in Indiana. They'd laugh and tell stories the whole time. Uncle Joe would come over and smoke and they'd kick him out. He'd roll his own cigarettes. Good times.
