1 T. Olive oil
1 small Onion (minced)
1 c. Italian Aborio Rice
2 c. Chicken stock
4 c. Fresh spinach (chopped)
10 thin Asparagus, cut
1/4 tsp. Nutmeg
1/2 c. Parmesan
Sea salt to taste

Directions:

Preheat oven to 400º

Cook onion in olive oil, add rice and stir.
Add the remaining ingredients and 1/2 of cheese
Pour into 1 qt. Soufflé dish and topped with cheese- Bake 35-40 min.
