1 medium head Cabbage
1 tbsp salt
1-1/2 C sugar (I don't use this much)
1Cup white vinegar
1 tsp mustard seed
1 tsp celery seed,(I don't use this much either)
2 Cups diced celery
1 bell pepper, diced
1 small onion, diced
2 carrots, shredded

Directions:
Directions:
Mix cabbage and salt only and refrigerate 2 hours.
Combine sugar, vinegar, mustard and celery seed in a sauce pan and bring to a boil 'til sugar is dissolved. Cool.
Mix carrots, onions, celery, green peppers. After the 2 hours mix with cabbage and pour vinegar sauce over all. Mix. Will keep about three weeks in refrigerator. Can be frozen.

I put the carrots, celery, onions and green pepper in an electric chopper- saves time.
