Ingredients: 2 tbsp butter or margarine 2tbsp bread crumbs 1/2 tsp parsley 1/2C sliced mushrooms 2tbsp thinly sliced celery 1tbsp finely chopped onion 1tbsp flour 1/2 tsp salt Dash paprika 1/2 C dry white wine 1lb sea or bay scallops 1/2 C whipping cream or half and half 1 egg yolk

Directions:THIS IS A MICROWAVE RECIPE. 1. Melt butter in a glass or microwave safe bowl. @ 1-1/2 size 2. In another small bowl melt another 2 Tbsp butter and mix with breadcrumbs and parsley and set aside. 3. Add mushroom, onion and celery to large bowl. Microwave HIGH 3-4 minutes until tender. Stir Halfway. 4. Stir in flour, salt and paprika. Slowly add wine stirring until smooth. Add scallops. Cover with Tight fitting lid and cook on Medium for 8-10 minutes. Stir occasionally. If using large scallops make sure they're cooked through. 5. Combine egg yolk and whipping cream. Pour over hot scallops. Microwave on Medium another 5-6 minutes until heated through. 6. Sprinkle top with breadcrumbs mixture. |

Notes: This is from my very first Tappan Microwave cookbook that came with the oven. We love it. Eat plain or with noodles or rice. I always added extra onions and celery and added parsley to the scallop mixture. The old oven was only @700 watts so watch your timing.
