1 1/2 # pork butt
1/2 # back fat
1 bunch fresh cilantro chopped (1 cup), Optional
1 fresh serrano pepper
1/4 c red wine vinegar
1 TBS chile powder
1 TBS sweet Hungarian paprika
2 tsp kosher salt
1 1/2 tsp whole cumin seeds
1 tsp cumin
1/2 tsp coarsely ground black pepper
1/2 tsp cayenne
1/4 tsp coriander

Grind meat through larger 1/4 " plate, twice. Mix all together with your hands. Chill over night. Make into patties or case. Can store raw in fridge up to 3 days.

That was a bit vinegary for me, maybe a 1/2 to 1 TBS less
