1 lb sausage
1 diced onion
3 boxes Jiffy Corn Muffin Mix
1-1/2 cups milk
3 beaten eggs
2 to 3 diced jalapenos or 1 can chopped green chilies
1 can cream corn
2 T sugar
1 lb grated cheddar cheese

Directions:
Directions:
Preheat oven to 350º; grease and flour 9 x 13 pan

Brown sausage and onion, then drain
While sausage/onion is cooking, mix the remaining items except for cheese.
Pour 1/2 batter into pan (3 cups)
Layer 1 lb cheddar cheese
Layer sausage/onions
Pour remaining batter on top of everything

Bake approximately 1 hr 15 mins

My boss attended the High Point Furniture Show many years ago. A competitor was serving this cornbread with stew in their hospitality booth! My boss didn't care for the stew but loved the cornbread and asked for the recipe. It is almost a meal by itself.
