Raspberry Black Bean Dip Recipe

1 15-oz can of black beans (drained)
1 tsp of garlic powder
1 tsp of cumin
salt & pepper to taste
2 tbsp of butter
1/2 large onion, diced
2 cloves of garlic, minced
1 8-oz pack of cream cheese (room temp)
1 Half jar of raspberry Chipotle Sauce (if you cannot find RC sauce, I use raspberry vinaigrette and then mash a couple frozen raspberries and blueberries to balance the vinegar with sweetness)
2 cups shredded Monterey Jack Cheese
2 cups shredded Pepper Jack (or Jalapeņo cheese)

1. Preheat the oven to 400 degrees
2. In a small saucepan/skillet, heat the black beans along with the cumin and slat & pepper
3. Add 2 tbsp of butter to a med skillet over med heat. Add onions and garlic and cook till soften/light brown or yellow color.
4. Add cream cheese, onion, and garlic to a mixing bowl and stir to combine.
5. In an oven-safe baking dish, layer the bottom of the dish with the cream-cheese mixture, then spread the black beans on top.
6. Pour the raspberry chipotle sauce or raspberry vinaigrette with mashed berries evenly over the beans (I go in a zig-zag shape, but I have found that the more raspberry sauce, the better taste).
7. Layer the top of the dish with the 2 cups of each cheese by pouring 1 cup of each atop the other (1 cup mon, 1 cup jack, 1 cup mon, 1 cup jack).
8. Bake for 12-15 minutes
9. Remove from oven and serve immediately.
10. Enjoy!
