1 c. butter (2 sticks)
2 c. packed brown sugar
1/2 c. corn syrup (either light or dark)
1 tsp. salt
1/2 tsp. baking soda
1 tsp. vanilla
1 c. popcorn (unpopped)

Directions:
Directions:
Pop the popcorn and put into a large bowl.
Melt the butter, stir in brown sugar, corn syrup and salt in large pan. Bring it to a boil stirring constantly. Boil for 5 minutes being careful no to let it burn, then remove from heat, and stir in baking soda and vanilla. Gradually pour over popcorn, mixing well. Put the popcorn mixture into a large roasting pan and bake at 250º for one hour, stirring every 15 minutes. Remove from oven, and cool.

You can add 1 T. Sirarcha sauce to the melted butter mixture for a spicy caramel corn.
