1 lb peeled and deveined shrimp
1 onion
˝ bell pepper
2 stalks celery
3 cloves garlic
2 green onions
2 tablespoons parsley
Olive oil
Salt and pepper
Yellow or white corn grits

Directions:
Directions:

Salt and pepper peeled shrimp.
Chop vegetables.
Sauté onion, bell pepper, garlic, and celery in olive oil until done. Remove from skillet
Sauté shrimp in olive oil in the same skillet until done (about 5 minutes).
Combine shrimp and vegetables.
Add salt and pepper to taste
Add chopped green onion and parsley.
Cook on low for about 5 minutes.
Prepare grits as directed. 4 cups water, 1 cup grits.



Yellow grits from Super One or Winn Dixie. Cook more than 5 minutes. The best grits are stone ground grits from The Fresh Market. Cook stone ground grits at least 30 minutes. Enjoy!!!

I first tasted shrimp and grits on the train from New Orleans to Atlanta. This was delicious lunch for a very interesting trip. This is my own version. I hope you enjoy it.
