1/2 c soft margarine
1 c white sugar
1 egg
1 ripe banana mashed
1 c milk
1/4 c orange juice
1 1/2 c all purpose flour
1 1/2 tsp baking powder
1 tsp vanilla

Directions:
Directions:
Cream margarine and sugar. Add egg and vanilla and beat well. Stir in mashed banana. Mix flour and baking powder and add alternately with orange juice. Put in greased 8" by 8" square or 10" by 6" rectangle cake pan. Combine 3 tbsp. sugar and 1/2 tsp (or to taste) cinnamon. Sprinkle on batter and bake at 350ºF until done, about 45 min. If serving cake hot, try pouring lemon sauce over each piece and spoon some crushed pineapple over the top.
