1 medium (or 2 small) cans of green enchilada sauce
1 pack of small corn tortillas
2 chicken breasts
1-2 cups shredded sharp cheddar cheese
1 can petite diced tomatoes with green chili
1/2-3/4 cup chopped onion

Directions:
Directions:
Boil chicken breasts until cooked, drain water, set aside to cool
Once cool, shred chicken in a mixing bowl
Mix in can of diced tomatoes, chopped onion and a handful of shredded cheddar.
Microwave 4-5 tortillas at a time
Place a hearty couple spoonfulls of chicken mixture in a line down center of each tortilla, roll up, and arrange, (ends down), in a greased 9X13" baking dish. Continue until you run out of tortillas, mixture, or space.
Pour the can(s) of enchilada sauce over all enchiladas, sprinkle with more shredded cheddar.
Bake uncovered at 350 for 30 minutes.
