2 1/2c. flour
1tsp. salt
1tsp. sugar
1c. butter
4-6tbsp. ice water

Filling:
2-3 chicken breasts
1/4 large onion
3 medium red potatoes
2-3 large carrots
2c. chicken stock
1/2c. flour
3/4c. milk
10oz. peas

Directions:
Directions:
Crust: Sift dry ingredients and add butter, cutting in till there are fine crumbles. Add ice water one tablespoon at a time until consistent ball forms. Divide dough in two and chill for one hour. When ready roll out on lightly floured surface. Form dough in pan and fork with plenty of holes. Once filling is added lay other crust on top, pinch edges, and put a few slits in the top. Brush top with 1egg and 1tsp. water mixture. Bake at 375º for 45minutes. Uncover and cook for another 15 minutes or until golden brown.

Filling: Sauté first 4 ingredients in a couple tablespoons of olive oil. Add chicken stock. Blend milk and flour together then slowly add to pan while stirring. Add in peas and cook till heated through. Add to uncooked pie crust and add the top crust.
