8-inch:

4 c. peaches, peeled and sliced
1 1/2 tsp. lemon juice
2/3 c. brown sugar or 3/4 c. honey
3 T. flour or 5 T. flour
1/2 tsp. cinnamon
1 T. butter

9-inch:

5 c. peaches, peeled and sliced
2 tsp. lemon juice
3/4 c. brown sugar or 1 c. honey
1/4 c. flour or 1/3 c. flour
1 tsp. cinnamon
2 T. butter

Directions:
Directions:
Heat oven to 425. Prepare pastry. In large bowl, combine peaches and lemon juice. Add sugar, flour and cinnamon. Toss lightly to mix. Turn into pastry-lined pie pan. Dot with butter. Cover with top crust. Cut slits. Seal and flute. Bake at 425 for 35-40 minutes or until juice begins to bubble through slits.

**If honey is used instead of sugar, the flour is increased as listed above.
