Chicken Croquettes (or Turkey) Recipe

Cream Sauce:

5 tbsp. flour
5 tbsp. butter
1 c. milk
1/2 tsp dry thyme
salt and pepper to taste

3 cups cooked chicken or turkey
1 tbsp. chicken base
1 stalk celery minced

Oil for frying
2 eggs
2 c. breadcrumbs (I use plain)

Directions:
Directions:
Cream sauce. Melt butter in heavy saucepan add flour and cook for 5 to 10 minutes on low burner (you don't want the butter/flour mixture to brown).

Add milk slowly and cook for another 10 minutes (mixture will be very thick)

Add leftover chicken cubed and chicken base to the cream mixture and put in refrigerator over night.

Next day:
In a bowl mix 2 eggs and a tbsp. of water together.

Put breadcrumbs on a paper plate.

Take out of the refrigerator the chicken mixture and form balls the a little bigger than a golf ball. Dredge in egg and . Fry in oil until brown on all sides.
You can eat them or freeze them.

Serve with leftover gravy or make a cream sauce..
