1 pkg (12 oz) Bacon
1 1/2 cups Onion - chopped
6 cups Chicken Broth
2 lbs - Baking Potatoes - peeled & cubed
2/3 cup Butter
3/4 cup Flour
4 cups Milk
1 tsp Salt
1 tsp freshly ground Pepper
i cup diced cooked Ham
8 oz Sour Cream
3 1/2 cups grated Cheddar Cheese
3/4 cup sliced Green Onion
I also added:
1 Carrot - grated
1 or 2 - chopped Celery Stalks (as preferred)
Diced Pepper (because I had some to use up)
Dried Parsley Flakes

Directions:
Directions:
Cook chopped bacon over medium heat until crispy, stirring occasionally. Drain on paper towel. Crumble bacon and set aside. Reserve 2 Tbsp drippings in skillet.
Cook onions in drippings until almost tender.
In a Dutch Oven - mix onion, broth & potatoes. Heat to boiling then reduce heat and cook for 10 minutes or until potatoes are very tender.
Meanwhile - in the same skillet, melt butter over low heat. Stir in flour with whisk until smooth. Cook & stir for 1 minute.
Gradually stir in 2 cups milk.
Pour milk mixture into potato mixture (and carrots, pepper, celery -if you choose to use them) & add remaining 2 cups milk and salt & pepper.

Cook over medium heat, stirring constantly with whisk, until mix is thickened & bubbly.

Stir in ham, 1/2 the bacon, sour cream, 2 cups of the cheese & 1/2 cup green onions.
Cook until thoroughly heated & cheese is melted.
evenly top individual servings with remaining bacon, 1/2 cup cheese & 1/4 cup green onions - if desired.

I followed the basic directions up to **
then put into crock pot on low to simmer & cook for an hour or two? Then go back to ^^^^^. Turned out amazing!

Best potato soup I have found! Delicious! :)
